Acheive Weight Loss Success Shrimp, Zucchini and Leek Risotto 

This risotto is virtually fat free.

2 zucchinis, finely chopped
1 leek, finely chopped
2 garlic cloves, peeled and pressed
1 tablespoon olive oil
1 ½ cups Arborio risotto rice
4 ounces of white wine (alternatively you can use dry cooking wine)
5 cups hot vegetable stock
8 ounces peeled and cooked shrimp
Handful of parsley for garnishing
