Artichoke Stuffed Chicken Recipe
8 ounces cream cheese
1 cup mayonaise
1 cup sour cream
1 cup parmesean cheese
1 8.5 ounce can artichoke hearts sliced into small pieces
4 chicken breasts
Several pieces of celery, chopped
Mix the cream cheese, mayonaise, sour cream, parmesan cheese, artichoke hearts and celery together in a medium bowl to use for the filling. Pound the chicken flat. Spread the artichoke filling on top of the flattened chicken. Roll up and secure in place with a toothpick or skewer and put into a baking dish. After all of the rolls are in place, sprinkle with parmesan cheese. Bake for 375 degrees F for 45 minutes until chicken juices run clear.
Tip- Add any extra filling on top of the chicken or serve it on the side at meal time.
